This week we propose a new and tasty recipe that we suggest as a starter or as a hot dish for a cocktail: Potato and Iberico ham croquettes.Ingredients: (for 4-6 people)
Preparation:We boil the potatoes without peeling them, in salted water. We peel and mash them. Then we add the lard and the cream and we mix it, together with the three egg yolks and a bit of nutmeg. We work the dough until it is well mixed and then add the whites of the eggs, that we shall have previously whipped. With this dough we make little balls placing in the center of each one a few Iberico ham gobbets. We cover the balls in breadcrumbs and fry in very hot olive oil. Serve hot or warm.
