RECIPES WITH IBERICO HAM: This week's recipe: Red pepper and Iberico ham Quiche
This week we propose a simple but tasty recipe that we suggest as a main course: Red pepper and Iberico ham Quiche
Ingredients (for 6 people):
* For the dough:
- 125 gr. butter
- 250 gr. flour
- 1 egg
* For the filling:
- 4 eggs
- 8 "piquillo" red peppers (1 can)
- 100 gr. Iberico ham gobbets
- 1 glass of cream (not too thick)
- salt and pepper
Mix all the ingredients for the dough with the tip of your fingers. Make a ball once it is evenly mixed, and let it rest in the fridge, covered with a cloth, at least for ½ hour.
A quick alternative is to buy a ready made dough, which you will easily find in your supermarket.
Hit the oven. Extend the dough on a tart mould of approx. 22 cm. diameter, previously buttered. Pinch the bottom of the dough with a fork and bake at 175º for 15 minutes.
Whisk the eggs, add the cream and the ham gobbets, salt and pepper. Fill in the tart. On top of the filling place carefully the peppers, in the shape of a star.Bake for a further 15 minutes.
