Recipes with HAM: This week's recipe: Iberico ham and tomato pudding.

This week we offer you a more elaborate recipe. We suggest it as a starter or as a light dinner: Iberico ham and tomato pudding.

 Ingredients: (for 4 people)

 

-              200 gr. mature tomatoes

-              4 eggs

-              100 gr. of Iberico ham cubes

-              A splash of milk or cream

-              Butter

-              Sugar

-              A pinch of salt

-              Some cherry tomatoes to decorate.

 

Preparation:

 

Wash and peel the tomatoes, in order to crush them in the mixer, adding a pinch of sugar, until you get a purée.

 

Separate the whites and the yolks and whisk the egg whites until stiff. Add the yolks to the purée.

 

Place the tomato purée in a pan to fry it lightly, stir constantly. Remove it from the heat and add the egg whites, salt and pepper, the ham cubes and a splash of milk. Mix it well.

Prepare some individual molds, spreading butter on them.  Afterwards, fill it with the mix and place it in the oven, preheated to 180º., until they set.

 

Remove from the oven and decorate with some ham cubes and some cherry tomatoes cut in half. Serve hot.
